Order meal prep online and there's a good chance what arrives is frozen. It's the industry norm, and it isn't laziness — it's a consequence of how those businesses are built.

Worth understanding before you pick one.

Why national services freeze

If a company cooks in one facility and ships nationwide, the food might be in transit for two or three days. There is no safe way to move a cooked chicken dish across several states at room temperature. Freezing is the only option that works.

So the freezing isn't a shortcut. It's the price of scale. But you still pay it at the plate.

What freezing does to a cooked meal

Freezing forms ice crystals inside the food. When those crystals form and then melt, they rupture cell walls — which is why thawed food often releases water and turns soft.

Some things survive it well. Soups and stews barely notice. Anything already broken down doesn't have far to fall.

Other things don't survive it at all. Rice goes gummy. Roasted vegetables go limp. Pasta loses its bite. Breaded or crisped items lose the texture that made them worth eating. And sauces that were emulsified when they were cooked often split on the way back.

You can reheat a frozen meal correctly and still end up with something noticeably different from what left the kitchen.

What we do instead

Meal Theory cooks for the orders that came in that week. Nothing is made in advance to sit in a freezer, and nothing has ever been frozen when it reaches you.

The catch, and it's a real one: we can only deliver around Delray Beach — roughly a six mile radius. We're not shipping to Orlando, and we won't pretend otherwise. Staying small geographically is what makes cooking fresh possible at all.

The short turnaround is part of it

Orders are open every day, and your meals arrive within 2-3 days. That gap is not padding — it is what lets everything get cooked fresh for the people who actually ordered.

Nothing is cooked before someone has ordered it. We shop and cook against the orders already in hand, in the couple of days between your order and your delivery. That is short enough that the food never has to be stored to survive the wait — which is the whole thing freezing exists to solve.

Which one should you pick?

Honestly: if you need six months of meals in a chest freezer, or you don't live near Delray Beach, a frozen national service is the right answer. That's a real use case and we're not it.
